Mango Cashew 'Cheesecake' Recipe

We wanted a special Mother’s Day recipe to celebrate with this weekend, and felt that this Mango Cashew “Cheese”cake is perfect for the occasion. My Mum loves a cheeky slice of cake now and again, and these little guys are quick and easy to make, impressive to look at, and healthy whilst suitably luxurious and indulgent, as a good treat should be. Best of all, you can make them up in advance and then all you have to do to serve is take them out of the fridge! Our Recipe Kits Are Created with the Community at the Heart

At Make Kit we want to build a business that has a positive impact on your diet and the diet of others. However, we also want to build a business that welcomes community engagement and brings people from all walks of life together.      Richard and Eugene, from Ickburgh School, helping bring the recipe bags to life with our stamps. We have funded 140 meals to people in need this month through community cooking courses with low-income families in Hackney and through providing hot meals at Hackney Winter Night Shelter. Make Kit @ Hackney Winter Night Shelter, Sat 24th February

Make Kit is not just about tasty recipe kits that make people's lives easier and tastier. We also want to be genuinely supporting our local community. We raised some funds from the sale of our Xmas kits to help provide some edible support for the Hackney Winter Night Shelter (HWNS) and spent last Saturday 24th February at St Luke's Church in Homerton cooking up a feast in the kitchen. Big thanks to Weronika and Jan that came and helped Make Kit out in the kitchen alongside me (Steve) in the kitchen. Lynda, Natalie and Yael were in action Front of House serving our guests. Recipe - Roasted Cauliflower Schwarma Steaks With Zhoug Couscous, Chickpeas, Tahina & Pomegranate

2017 was a game changing year for cauliflower. The humble cauli’s image went from been seen as a soggy side to becoming the alchemist’s dream ingredient. When roasted, it’s sweet, nutty, yeasty richness really gets a chance to shine. There’s also an element of theatricality to the cauliflower being served as a roasted centerpiece, with its burnt smoky edges and incredible Fibonacci marbling. To make a complete meal, the roasted cauliflower is served with a chickpea and pomegranate couscous that is seasoned with Zhoug, a kind of Middle Eastern pesto, made from green chilli, garlic and fresh green herbs.
