We wanted to create a dish that would be a spectacular centrepiece to a Christmas dinner that is suitable for vegans and vegetarians and wouldn’t break the bank or take half the day to prepare so came up with this Parsnip and Cranberry Nut Loaf.

This recipe gets all the classic Xmas flavours of cranberry, parsnips, sage and onion stuffing wrapped up into a hearty nut loaf, packed full of protein, served with crispy roast potatoes, carrots and Brussels sprouts.

Maris piper potatoes
Kidney beans (400g)
Brussels sprouts
Cranberry sauce
Garlic cloves
MK nut roast mix: 40g chopped walnuts, 40g chopped almond, 40g sage and onion stuffing mix, 30g pumpkin seeds, 30g sunflower seeds, 10g vegetarian gravy granules
MK gravy mix: 20g vegetarian gravy granules
MK maple spice mix: 1 tbsp maple syrup, ½ tsp allspice
