Frittatas are quick and easy to make, and you can fill them with pretty much anything you like. This one contains a few different root vegetables, which means vegetables that grow underground. These tend to be starchy, wholesome vegetables that are often naturally sweet. You could try swapping in other root vegetables such as potatoes, celeriac or beetroot. The frittata is served with a small side salad.
