Roasted Butternut Squash and Spinach Risotto
Everyone should have a couple of risotto dishes up their sleeves. This one is a perfect for Autumn and whilst people think they are time-consuming, they aren't! They just take a little care to get the risotto rice cooking and to draw out its creaminess. You'll be using butternut squash both roasted and grated in the stock and a handful of spinach to give you more of your 5-a-day.
