This recipe comes from the lovely team at the Long White Cloud, a cafe on Hackney Road, and is one of the most popular dishes on their menu and is great to share around the dinner table.

Potato and sweet red onion are cooked up first, then comes the spinach and the egg mixture with the halloumi layered on top and finished under the grill. A wedge of frittata is served alongside a crisp baby gem, cucumber and tomato salad.
